Scandinavian Salmon-cheddar Pie

Ingredients

For pies:
8 unbaked pie shells (9 inches each)
24 large eggs, beaten
1 cup milk
1 cup salt-free butter, melted
1 cup parsley, snipped
2 teaspoons dry mustard
2 tablespoons white Worcestershire sauce
1/2 cup green onion, minced
1/2 cup lemon juice
4 pounds fresh cooked flaked salmon or 8 cans (7 3/4 ounces each) salmon, drained
4 pounds Wisconsin Cheddar cheese, grated

Topping:
2 cups cucumber, chopped
4 pounds Sour Cream
1/4 cup dill weed
1/4 cup parsley, snipped
1/3 cup white wine vinegar or lemon juice
2 teaspoons white pepper
