  • 4.0 tbsp maple syrup
  • 1½ tbsp sherry vinegar
  • 1½ tbsp groundnut oil
  • 1.0 tbsp hazelnut oil
  • 225.0g wild mushrooms (girolles, trompettes, ceps, oyster mushrooms)
  • 25.0g butter
  • 2 x 250g bags spinach , stalks removed
