Spicy Coconut Chicken Curry Recipe


  • 6 chicken drumsticks and 6 chicken thighs
  • Kosher salt
  • Vegetable oil
  • 1 yellow onion, sliced
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, peeled and minced
  • 3 Tbsp curry powder (preferably Madras, but any will do)
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (we skipped this due to the kids)
  • 1 (14.5oz) can chopped tomatoes, drained
  • 1 (15oz) can light coconut milk
  • 1 cup frozen peas, thawed
  • 1 cup chopped fresh cilantro leaves


This Is More Of An Indian Than Thai Curry, And Has A Condensed, Pungent Sauce. It Is Unusual And Really Wonderful. Curries Are Hit Or Miss With Our Kids, But They All Loved This…
