Soba In Chicken Broth Recipe

Ingredients

  • 8 ounce Dry soba noodles
  • 8 c. Homemade chicken broth
  • 1 Tbsp. Finely grated fresh ginger
  • 1/4 lb Fresh shiitake mushrooms, stems removed, slivered (about 1 c.)
  • 2 Tbsp. Sake or possibly mirin
  • 2 Tbsp. Tamari or possibly reduced-sodium soy sauce
  • 1 Tbsp. Rice-wine vinegar
  • 2 Tbsp. Miso paste
  • 1 c. Packed spinach leaves, washed, dry & coarsely minced
  • 4 x Scallions, finely minced
  • 1/4 c. Grated daikon radish
