McDevitt's Miso-Marinated Sea Bass

Ingredients

RELISH

  1. 4 medium artichokes
  2. 1 lemon, halved
  3. 4 cups water
  4. 1 cup white wine
  5. 2 quarter-size slices of fresh ginger
  6. 1 tablespoon curry powder
  7. 1 teaspoon turmeric
  8. 1/2 pound fresh or frozen soybeans, shelled (1/2 cup), see Note
  9. 2 scallions, thinly sliced
  10. 1/2 small red onion, finely chopped
  11. 1 plum tomato, finely chopped

GINGER MAYONNAISE

  1. 1/4 cup mayonnaise
  2. 1 garlic clove, minced
  3. 1 teaspoon minced fresh ginger
  4. 1 tablespoon fresh lime juice
  5. 1 1/2 teaspoons Dijon mustard
  6. 1 1/2 teaspoons rice vinegar
  7. 1/4 teaspoon hot sauce, preferably Sriracha
  8. Pinch of salt and freshly ground pepper

SEA BASS

  1. One 4-inch piece of fresh ginger
  2. 1 cup sake
  3. 1/4 cup mirin
  4. 2 tablespoons soy sauce
  5. 2 tablespoons yellow miso paste (See Note)
  6. Four 6-ounce sea bass fillets, about 1 inch thick
  7. Salt and freshly ground pepper
  8. 2 tablespoons olive oil
  9. 2 tablespoons fresh lime juice
  10. 2 tablespoons minced chives
