  • 1 jar marinated artichokes - (6 1/2 ounce)
  • 4 Tbsp. extra virgin olive oil
  • 2 lrg celery stalks cut 1/2" dice
  • 1 sm red onion cut 1/2" dice
  • 1 lrg red bell pepper cut 1/2" dice
  • 8 x Kalamata olives pitted, sliced
  • 3 Tbsp. red wine vinegar
  • 3 Tbsp. balsamic vinegar
  • 1 tsp dry oregano
  • 1 tsp chopped garlic
  • 1/2 tsp salt
  •     Freshly-grnd black pepper to taste
