Ingredients
- 2 strip or skirt steaks, approximately 1 lb each
- 1 package of rice vermicelli noodles
- 1 cucumber, peeled, seeded and cut into matchsticks
- 1 red bell pepper, cut into matchsticks
- Fresh mint and/or cilantro to garnish
- For the Beef Marinade:
- 2 Tbsp fish sauce
- 3 Tbsp soy sauce
- 1 tsp Worcestershire sauce
- 1 tsp sesame oil
- 2 Tbsp brown sugar
- 2 garlic cloves, minced
- 1 inch fresh ginger, peeled and grated
- 1 Tbsp fresh lemongrass, finely diced (remove tough outer leaves and discard the lower bulb)
- 1 green onion, finely chopped
- 1 red chili pepper, finely chopped
- For the Dipping/Drizzling sauce:
- Juice of 2 limes
- 3 Tbsp brown sugar
- 3 Tbsp fish sauce
- 2 large garlic cloves, minced
- 1 red chili, minced
- ½ cup water
