Choucroute Garnie Recipe

Ingredients

  • 1 3/4 lb Smoked meaty ham hocks
  • 1 lb Fully cooked bratwurst
  • 8 ounce Thick-sliced bacon strips, cut crosswise into 1-inch pcs
  • 2 lrg Onions, minced
  • 1 1/2 tsp Juniper berries, (optional)
  • 1 1/2 tsp Whole black peppercorns
  • 10 whl cloves
  • 8 whl allspice
  • 3 x Bay leaves
  • 3 x Red Delicious apples, unpeeled, cored, cut into 1-inch pcs
  • 2 x 2 lb. jars sauerkraut, squeezed dry
  • 2 lb Fully cooked kielbasa, cut diagonally into 1-inch pcs
  • 1 lb Fully cooked knockwurst
  • 2 c. Alsatian Pinot Blanc or possibly other dry white wine
  • 2 lb Small red-skinned potatoes
  • 2/3 c. Minced fresh parsley
  •     Assorted mustards
  •     Prepared white horseradish
