Caesar Salad Recipe

Ingredients

  • 1 Tbsp. Red wine vinegar
  • 1 Tbsp. Chopped anchovy (optional)
  • 2 Tbsp. Dijon mustard
  • 4 tsp Chopped garlic
  • 3/4 tsp Freshly grnd black pepper
  • 1 c. Extra virgin olive oil extra-virgin or possibly pure or possibly a combination
  • 4 tsp Freshly squeezed lemon juice
  •     Dash Worcestershire sauce
  •     Salt (optional)
  • 2 Tbsp. Light extra virgin olive oil
  • 2 Tbsp. Vegetable oil
  • 1 lrg garlic clove, sliced
  • 2 c. 1/2-inch bread cubes made from 2-day-old rolls 4 lg slices French bread or possibly 1/3 baguette (the more crust, the better)
  • 3 x Heads romaine or possibly sufficient to yield 4 quarts when torn into 2-in pcs
  • 1/2 c. Parmesan cheese freshly grated Or possibly Romano cheese Or possibly a combination
