- 3 cups red lentils, rinsed
- 1 potato rinsed and chopped
- 1 can tomato paste
- 2 cups chopped onions
- 1/2 tsp cayenne pepper (go lighter for kids)
- 3 Tbsp lemon juice
- 3/4 cup extra virgin olive oil
- 16 cups water mixed with 2 cubes/servings vegetable stock or chicken stock
- Optional: Sliced lemon, fresh torn mint leaves, plain yogurt, sumac.
