- 1 Tbsp. Dijon mustard
- 1 c. extra virgin extra virgin olive oil

- About 1/2 lb. organic greens
- 1/4 lb French green beans, blanched
- 4 x hard-cooked Large eggs, quartered
- 3 x to 4 ripe tomatoes, sliced
- 1/3 c. black olives
- 8 x salt-packed anchovy fillets, cleaned and rinsed
- Healthy pinch of coarse sea salt
- 1 Tbsp. extra-virgin extra virgin olive oil
