  • 1 bunch Parsley chopped
  • 1 bunch Cilantro chopped
  • 3-4 cloves Garlic- minced
  • 2 Onions chopped
  • 1 Tbsp red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp curry powder (optional)
  • 1/2 tsp ground cloves (optional)
  • 1/8 tsp powdered or regular Saffron
  • Olive oil for frying eggplant
  • Pomegranate seeds (if available)
