  • 3 c. Water
  • 1 1/2 tsp Salt

  • 3 med Aubergines
  • 1/4 c. Water
  • 1/4 c. Sherry
  • 2 Tbsp. Extra virgin olive oil
  • 3 c. Chopped onions
  • 1 lrg Red bell pepper, chopped
  • 1 Tbsp. Sherry
  • 1/2 tsp Cayenne
  • 2 med Tomatoes, minced
  • 1/2 c. Dry currants
  • 1/2 c. Minced fresh parsley
  • 1/4 tsp Black pepper
  • 1/2 c. Tomato juice
  • 1/2 c. Toasted slivered almonds
  •     Minced fresh parsely
