Cuban Style Sofrito Rice With Sherry Sauteed Shrimp Recipe

Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1 lrg cooking onion, finely, minced
  • 2 clv garlic, finely, chopped
  • 1/2 x green pepper, finely, diced
  • 1/2 x red pepper, finely, diced
  •     several threads saffron
  • 1/2 tsp cumin, seed, grnd
  • 1 tsp dry oregano
  • 1/4 tsp cayenne pepper
  • 4 x plum tomato, diced
  •     salt
  •     freshly cracked black pepper
  • 1 3/4 c. water or possibly 1 3/4 c. chicken stock or possibly 1 3/4 c. vegetable stock
  • 1 c. basmati rice, rinsed well in hot water
  •     Sherry Sauteed Shrimp
  • 2 Tbsp. extra virgin olive oil
  • 1 clv garlic, thinly, sliced
  • 1 x onion, thinly, sliced
  • 12 lrg peeled deveined shrimp, tail on
  •     salt, to taste
  •     pepper, to taste
  • 3 x roma tomato, peeled, and, diced
  • 1/3 c. sherry
  • 1/4 c. minced fresh parsley
