Guo Tie Recipe

Ingredients

  • 2 c. All-purpose flour
  • 1/2 c. Cool water
  • 1 lb Lean grnd pork, (or possibly chicken, veal, turkey, beef, etc)
  • 2 Tbsp. Cool water
  • 1 Tbsp. Dry sherry
  • 1 Tbsp. Soy sauce
  • 1 Tbsp. Toasted sesame oil
  • 1 tsp Salt
  • 1 tsp Finely minced fresh ginger
  • 1/2 lb Chinese cabbage, (or possibly bok choy, spinach, scallions), trimmed and finely minced ( 2 c.)
  • 4 Tbsp. Toasted sesame oil
  • 4 tsp Chopped fresh ginger
  • 4 Tbsp. Chopped scallion
  • 6 Tbsp. Soy sauce
  • 4 tsp Chinese rice vinegar or possibly cider vinegar
  • 1/2 c. Low salt chicken stock
  • 2 tsp Sugar

Description

Dumpling Dough: If The Dough Feels Stiff, Add In A Little More Water A Tbsp. At A Time, But Do Not Exceed 3/4 C. Total. Yields 48 Three-inchwrappers. Sift Flour Into A Bowl.…
