Afghan Squash (winter) Recipe


  • 1/2 c. sliced onion
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cardamom
  • 1/4 tsp grnd cloves
  • 1 x butternut squash peeled and cubed
  •     (about 3 c.)


Saute/fry Onion In Extra Virgin Olive Oil In A Small Casserole. Stir In Salt, Cumin, Coriander, Cardamom, And Cloves. Add In Squash And 1 C. Water. Cook Till Tender. Serves 8
