Andalusian Gazpacho Recipe


  • 2 slc stale bread crusts removed
  • 900 gm ripe tomatoes peeled and minced
  • 1 x fresh green chilli deseeded and minced
  • 75 x mm length of cucumber peeled and coarsley minced
  • 2 clv garlic peeled and crushed
  • 2 clv garlic peeled and crushed
  • 1/2 x green or possibly red sweet pepper deseeded and coarsely minced
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp paprika
  • 2 Tbsp. parsley minced
  • 8 x basil or possibly mint leaves
  • 1 x salt and freshly grnd black pepper
  •     large handful of basil torn into strips
  • 1 x green or possibly red sweet pepper trimmed deseeded and finely diced
  • 4 x cm cucumber peeled and finely diced
  • 3 Tbsp. finely diced red onion
  •     garlic croutons
