Annasi Curry (pineapple Curry) Recipe


  • 1 med sized ripe pineapple, cleaned, peeled and diced
  •     oil for cooking
  • 2 x onions, minced
  • 1 x stem of lemon grass
  •     a few sprigs of curry leaves
  • 1 1/2 c. thick coconut lowfat milk, (extracted from 1/2 grated coconut) 1 ts mustard pwdr)
  • 1 tsp cinnamon pwdr
  • 6 x dry red chiles, powdered
  •     a healthy pinch of turmeric pwdr
  •     salt to taste
  • 1 tsp fennel seeds, roasted and powdered


HEAT Oil In A Pan And Fry Half The Onions, Lemon Grass And Curry Leaves Till The Onions Turn Brown. Add In The Remaining Ingredients, Except The Fennel Pwdr, And Simmer Till Done.…
