  • 14 teaspoon Ground Turmeric
  • 5 Dried Arbol Chile Peppers, (5 to 8) stemmed
  • 2 stalks Fresh Lemon Grass
  • 3 tablespoons Vegetable Oil
  • 1 pound Boneless Skinless Chicken Thigh, cubed
  • 1 teaspoon Shrimp Paste, **use GF as necessary
  • 3 large Shallot, thinly sliced
  • 1 can Coconut Milk, (13.5 oz)
  • 1 quart Reduced Sodium Chicken Broth, **use GF as necessary
  • 2 teaspoons Sugar
  • 3 teaspoons Kosher Salt
  • 1 stick Cinnamon
  • 6 ounces Mung Bean Sprouts, rinsed
  • 8 ounces Wide Rice Noodles
  • 13 cup Fresh Mint Leaf, torn
  • 13 cup Fresh Cilantro, leaves, torn
  • wedge Lime
  • Sambal Oelek, chili paste
