My Bouillabaisse Recipe

Ingredients

  • 2 x Onions, minced
  • 5 clv garlic, chopped
  • 1/2 c. Parsley, minced
  • 1 x Leek, sliced (reserve dark)
  • 2 Tbsp. Extra virgin olive oil
  • 4 x Tomatoes, peel,seed,chop
  • 1/4 tsp Sugar
  • 4 c. Doxee clam juice
  • 1 c. Dry Sherry
  • 1 c. Water
  • 2 x Orange zest
  • 1 dsh Cayenne
  • 3 x Saffron threads
  • 1 x Bay leaf
  • 1 tsp Dry basil
  • 1 tsp Dry thyme
  • 1 Tbsp. Salt (or possibly more-fish is bland)
  • 1 lb Red Snapper
  • 1 lb Rock Shrimp
  • 1 lb Bay scallops
  • 1 doz clams,steamed*
  • 12 x Appalachacola oysters
