Apricot Jicama Salsa Recipe


  • 1/2 lb Jicama, sliced thin, cut into 1/4-inch strips
  • 4 x Apricots, pitted, cut into 1/2-inch slices
  • 2 Tbsp. Chopped fresh cilantro
  • 1/2 sm Red onion, halved & sliced thin
  • 1/2 sm Red bell pepper, cored & sliced thin
  • 1 Tbsp. Chopped chipotle chiles
  • 2 Tbsp. Fresh lime juice, (1 lime for 2 Tbsp.)
  • 1 Tbsp. Extra virgin olive oil
  •     Salt and grnd black pepper
