Seafood Okra Gumbo Recipe

Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 1/2 c. Minced onions
  • 1/4 c. Minced celery
  • 1/4 c. Minced green bell peppers
  • 1/4 c. Minced red bell peppers
  • 1 Tbsp. Salt
  •     Freshly-grnd black pepper
  • 1/2 c. Peeled, seeded, minced Italian plum
  •     tomatoes
  • 2 Tbsp. Finely-minced fresh garlic
  • 1 Tbsp. Finely-minced fresh shallots
  • 2 quart Fish stock
  • 1 c. Diced hard-fleshed fish - (abt 1/2 lb)
  •     (such as grouper, tile, monk or possibly sea bass)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Warm sauce
  • 6 x Bay leaves
  • 1 Tbsp. Chopped fresh basil
  • 1 tsp Chopped fresh oregano
  • 1 tsp Stemmed fresh thyme
  • 1 c. Fresh shrimp - (abt 1/2 lb) peeled, deveined
  • 1 c. Sliced fresh okra - (abt 8 large)

  • 1 c. Shucked fresh oysters in their liquor
  • 1 c. Fresh lump crabmeat picked over
  • 1 tsp File pwdr (grnd sassafras)
