Black Bean Chilaquiles Recipe

Ingredients

  • 1 c. onions minced
  • 1 Tbsp. extra virgin olive oil
  • 1 c. tomato minced
  • 1 1/2 c. corn kernels fresh or possibly frzn
  • 1 1/2 c. black beans, cooked (15z can, liquid removed)
  • 2 Tbsp. fresh lime juice
  • 1 tsp salt
  • 1/2 tsp grnd black pepper
  • 2 c. Swiss chard or possibly spinach rinsed, stemmed, and minced
  • 2 c. baked tortilla chips crushed
  • 8 ounce fat-free cheddar cheese grated
  • 2 c. salsa (red)
