Paella Recipe

Ingredients

  • 2 lb Chicken cut up
  • 1/2 c. Extra virgin olive oil
  • 1/2 lb Chorizo - Spanish or possibly Mexican
  • 2 x Onions peeled, sliced
  • 3 x Garlic cloves crushed
  • 1/4 lb Smoked ham cut julienne
  • 2 x Tomatoes, red ripe diced
  • 2 c. Long-grain rice converted
  • 3 c. Chicken stock fresh or possibly canned
  • 1 pch Saffron or possibly turmeric optional
  • 1 Tbsp. Paprika
  • 1/4 tsp Red-pepper flakes crushed
  • 1/4 tsp Thyme whole
  • 10 ounce Frzn peas - (1 pkg) thawed
  • 2 x Red bell peppers, sweet cut into rings
  • 10 ounce Frzn artichoke hearts - (1 pkg) thawed
  • 1 lb Squid cleaned, and
  •     cut into circles
  • 1/2 lb Large shrimp peeled, deveined
  • 1 1/2 lb Clams in the shell rinsed
  • 1 c. Dry white wine
  •     Freshly-grnd black pepper to taste
  •     Salt to taste
