Mussel and Chorizo Soup

Ingredients

  1. 1/2cup dry white wine
  2. 1tablespoon finely minced shallots
  3. 3pounds mussels, scrubbed and debearded
  4. 2tablespoons extra-virgin olive oil
  5. 5ounces dry chorizo, finely diced (about 3/4 cup)
  6. 2medium carrots, finely diced
  7. 2medium leeks, white and tender greens parts only, finely diced
  8. 1small onion, finely diced
  9. 2garlic cloves, minced
  10. 1large plum tomato, finely diced
  11. 1/4teaspoon saffron threads, crumbled
  12. 3cups low-sodium fish stock, clam juice or chicken broth
  13. 1/2cup heavy cream
  14. Salt and freshly ground white pepper
  15. 1teaspoon chopped thyme
