  • 25g unsalted butter
  • 2 large onions, halved and thinly sliced
  • ½ tsp sugar
  • 1 tbsp plain flour
  • 600ml home-made or fresh beef stock
  • 1 tbsp Worcestershire sauce
  • ½ tsp English mustard
  • 1/2 tsp thyme leaves
