  • 1/3 cup low sodium tomato juice or V8
  • 1/4 cup natural peanut butter
  • 2 tbsp low sodium soy sauce
  • 3 tbsp fresh lime or lemon juice
  • 1 tbsp raw honey
  • 1/4 tsp crushed red pepper
  • 1 lb raw shrimp, peeled & deveined
  • 8 oz rice noodles or whole wheat thin spaghetti
  • 2 cups thinly sliced cabbage
  • 1 chopped green onion3 tbsp crushed peanuts
