- 2 Tbsp. Unsulfured, (light) molasses
- 2 Tbsp. Minced fresh thyme or possibly 2 tsp. dry
- 2 Tbsp. Minced fresh rosemary of 2 tsp. dry
- 1 Tbsp. Crushed juniper berries or possibly 2 Tbsp. gin
- 3 lrg Garlic cloves, chopped
- 3 x Strips orange peel, (orange part only) (2x1-inch)
- 3 x Strips lemon peel, (yellow part only) (2x1-inch)
- 8 whl cloves
- 8 whl black peppercorns
- 2 x Bay leaves, broken in half
- 3/4 tsp Salt
