Emerilized Eggs Benedict Recipe

Ingredients

  • 4 x English muffins split in half
  • 4 Tbsp. Butter at room temperature
  • 4 x Beef fillets - (6 ounce ea) split in half
  • 2 Tbsp. Extra virgin olive oil
  •     Emeril"s Essence see * Note
  • 3 c. water
  • 1/2 tsp White vinegar
  •     Salt to Taste
  • 8 x Large eggs individually cracked into a c.
  • 4 x Egg yolks
  • 2 tsp Fresh lemon juice
  • 1 Tbsp. Water
  • 1 Tbsp. Creole Mustard
  • 2 tsp Finely-minced parsley
  • 1/2 lb Butter melted and hot
