Russian Borscht Recipe

Ingredients

  • 1 1/2 - 2 lbs. good stew meat, cut in sm. bite-size pcs
  • 7 c. beef stock or possibly bouillon
  • 1 (1 lb.) can tomatoes, minced
  • 1 stalk celery with leaves, minced
  • 2 sprigs celery parsley, minced
  • 2 bay leaves
  • 1 pound cabbage, shredded
  • 2 carrots, minced coarsely
  • 1 lg. onion, minced
  • 1 teaspoon dry dill
  • 1/8 teaspoon caraway seed
  • 1/2 c. water
  • 2 tbsp. vinegar
  • 1 teaspoon sugar
  • 1 pound cooked beets, shredded, including juice
  • Lowfat sour cream

Description

Simmer Meat For About 1 Hour In Beef Stock. Add In All Other Ingredients, Except Beets And Lowfat Sour Cream. Simmer, Partially Covered, Till Vegetables Are Tender - About 1 Hour.…
