Grilled Red Snapper With Asian-style Vegetables And Rice

Ingredients

Ingredients For the red snapper
  • 4 tbsp olive oil

  • 1 tbsp red wine vinegar

  • 4 tbsp finely chopped fresh coriander

  • ½ jalapeño chilli (from a jar) or fresh green chilli, seeds removed, finely chopped

  • salt, to taste

  • 2 red snapper fillets

For the dipping sauce
  • 2 tbsp groundnut oil

  • 1 tbsp ketjap manis

  • salt and freshly ground black pepper

  • 3 tbsp Thai fish sauce (nam pla)

  • 3 tbsp fresh lime juice

  • 1 red chilli, finely sliced

  • 1 tbsp dark brown sugar

  • 2 tsp finely chopped fresh coriander

  • 1 medium shallot, thinly sliced

For the Asian-style vegetables and rice
  • 150g/5oz sticky jasmine rice

  • 1 tbsp vegetable or groundnut oil

  • 2.5cm/1in piece fresh root ginger, peeled and sliced

  • 1 red chilli, sliced

  • 1 garlic clove, sliced

  • 250g/9oz mixed greens, such as pak choi, gai lan, choy sum broccoli, or spring greens, trimmed and halved

  • 2 tbsp vegetable stock or water

  • sesame oil, to taste

  • soy sauce, to taste
