Chicken Marengo On Potato Rösti With A Poached Quail’s Egg And Asparagus

Ingredients

Ingredients For the chicken marengo
  • 4 large skinless chicken thighs, boned

  • salt and fresh black pepper

  • plain flour, for dusting

  • 2 tbsp olive oil

  • 3 large tomatoes, roughly chopped

  • 10 black olives in brine, drained, stones removed, halved

  • 1 tbsp tomato purée

  • 3 garlic cloves, crushed

  • 150ml/5fl oz dry white wine

  • 150ml/5fl oz chicken stock

  • 1 tbsp butter

  • 250g/9oz button mushrooms, sliced

  • 2 tbsp finely chopped fresh parsley

For the potato rösti
  • 3 large red potatoes, peeled, grated

  • 2 banana shallots, peeled, finely sliced

  • 50g/2oz butter, melted

  • salt and freshly ground black pepper

  • 2-3 tbsp vegetable oil

For the asparagus
  • 50g/2oz butter

  • 150g/5oz asparagus tips

  • 1 lemon, juice only

  • salt and freshly ground black pepper

For the quails’ eggs
  • 50ml/2oz white wine vinegar

  • 4 quail's’ eggs
