Ingredients

Ingredients For the crisp noodles
  • 25g/1oz rice vermicelli, broken into 7cm/3in pieces

  • vegetable oil, for deep frying

  • 1 red chilli, finely sliced

  • 1 tbsp chopped fresh coriander

For the beef
  • 2 tsp Shaoxing rice wine

  • 1 tsp dark soy sauce

  • 1 tsp oyster sauce

  • 1 sirloin steak (weighing about 225g/8oz), sliced

  • 1 tsp vegetable oil

  • ½ tsp Sichuan pepper, crushed

  • ½ tsp black peppercorns, crushed

  • ½ tsp pink peppercorns, crushed

For the stir fry
  • 1 tsp vegetable oil

  • 1 garlic clove, thinly sliced

  • 2.5cm/1in-piece root ginger, peeled and thinly sliced

  • 1 small red onion, thinly sliced

  • 1 red pepper, seeds removed, flesh thinly sliced

  • small handful Tenderstem broccoli

  • small handful baby sweetcorn

  • ½ carrot, cut into thin strips

  • 1 long red chilli, finely chopped

  • dash light soy sauce

  • 1 tbsp oyster sauce

  • toasted sesame oil, for drizzling
