Seared Scallops With Crab, Cucumber, Lime And Vanilla

Ingredients

Ingredients For the crab mayonnaise
  • 2 egg yolks

  • 2 tsp white wine vinegar

  • 1 tsp Dijon mustard

  • 150ml/5fl oz extra virgin olive oil

  • 150ml/5fl oz rapeseed oil

  • salt and freshly ground black pepper

  • 200g/7oz white crabmeat

  • 4 tbsp finely chopped chives

For the cucumber and scallops
  • 1 cucumber

  • 2 vanilla pods

  • 2 limes, juice only

  • ½-1 tsp caster sugar

  • 3-4 tbsp extra virgin olive oil

  • salt and freshly ground black pepper

  • 8 large scallops, cleaned and dried on kitchen paper

  • 25g/1oz butter

  • 1 punnet basil cress, to serve
