Malai Kofta, Aromatic Rice, Puris And Cucumber Raita

Ingredients

Ingredients For the group A spice powder
  • 1cm/½in cinnamon stick

  • 4 green cardamom pods

  • 6 cloves

For the group B spice powder
  • 2 tbsp coriander seeds

  • 1 tsp cumin seeds

  • 1 tsp black peppercorns

  • 1 tsp fennel seeds

  • 2 bay leaves

For the kofta
  • 2 tbsp almonds

  • 2 tbsp cashew nuts

  • 1 tbsp raisins

  • 110g/4oz paneer cheese, grated

  • 110g/4oz cold leftover mashed potato

  • 1 green chilli, finely chopped

  • 1 tbsp chopped fresh coriander

  • 1 tsp ground cumin

  • ½ tsp chilli powder

  • salt

  • cornflour, for coating

  • oil, for deep-frying

For the gravy
  • 2 tbsp oil

  • 1 onion, sliced

  • 1 tsp ginger paste (or grated ginger mixed with a little water)

  • 1 tsp garlic paste (or grated garlic mixed with a little water)

  • 1 x 200g/7oz can chopped tomatoes

  • 1 tbsp group B spice powder (see above)

  • 1 tsp chilli powder

  • 1 tsp ground cumin

  • 1 tsp ground turmeric

  • 150ml/5fl oz double cream

  • 2 tsp fried cashew nuts, ground to a powder

For the saffron rice
  • 2 tbsp oil

  • 1 small onion, sliced

  • 3 tbsp ghee

  • 6 cashew nuts

  • 1 tsp group A spice powder (see above)

  • 1 tsp ground turmeric

  • 200g/7oz long-grain basmati rice, washed and soaked

  • pinch saffron threads soaked in 1tbsp milk

For the puris
  • 75g/3oz wholemeal bread flour

  • 75g/3oz strong white bread flour

  • plain flour, for dusting

  • oil, for deep-frying and greasing

For the cucumber raita
  • 200g/7oz thick plain yoghurt

  • ½ cucumber, finely chopped

  • ½ tsp ground cumin

  • ½ tsp red chilli powder

  • ½ tsp chopped fresh coriander

To serve
  • 1 red pepper, thinly sliced

  • 1 carrot, thinly sliced

  • pinch each of group A and B spice powders

  • chopped fresh coriander leaves
