Pan-fried Chicken With Green Peppercorn Sauce, Strawberries And Sautéed Potatoes

Ingredients

Ingredients For the potatoes
  • 5 Jersey Royal potatoes, or similar new potatoes, peeled and cut into quarters

  • 2 tbsp extra virgin olive oil

  • 2 sprigs fresh rosemary, leaves only

  • handful pea shoots

  • salt and freshly ground black pepper

For the chicken
  • 1 tbsp extra virgin olive oil

  • 1 tbsp butter

  • 2 garlic cloves, finely chopped

  • 1 chicken breast, skin on

For the green peppercorn sauce
  • 1 tbsp butter

  • ½ onion, finely chopped

  • ½ beef or chicken stock cube, dissolved in a 1 tbsp boiling water

  • 2 tsp balsamic vinegar

  • 1 tsp Dijon mustard

  • 200ml/7fl oz double cream

  • 1 tbsp whole green peppercorns

  • salt and freshly ground black pepper

For the strawberry sauce
  • 10 strawberries, hulls removed, cut in half

  • 1 tbsp balsamic vinegar

  • freshly ground black pepper
