Ingredients For the chilli mayonnaise
  • 1 free-range egg yolk

  • ½ tsp white wine vinegar

  • ½ tsp wholegrain mustard

  • 150ml/5fl oz vegetable oil

For the pineapple salsa
  • 1 tbsp olive oil

  • 1 lime, juice only

  • 1 tbsp runny honey

  • 100g/3½oz fresh pineapple, finely chopped

  • 25g/1oz fresh coriander, finely chopped

For the gammon burger
  • 100g/3½oz breadcrumbs

  • 150g/5½oz gammon

  • 1 tbsp fresh chives, finely chopped

  • 50g/1¾oz plain flour

  • 1 tbsp olive oil

  • 2 slices ciabatta

For the skinny chips
  • 500ml/18fl oz vegetable oil

  • ½ potato, peeled and cut into skinny long chips

  • pinch salt

For the herb salad
  • 1 tbsp olive oil

  • ½ lime, juice only

  • 25g/1oz fresh flatleaf parsley

  • 15g/½oz fresh mint leaves

  • salt and freshly ground black pepper
