For the mashed potatoes and leek
  • 500g/1lb 2oz potatoes, peeled, chopped

  • knob of butter, plus extra for greasing

  • 80-110ml/3-4fl oz double cream

  • salt and freshly ground white pepper

  • 3 leeks, trimmed, sliced

For the sauce
  • 50g/2oz unsalted butter

  • 50g/2oz plain flour

  • 600ml/1 pint milk

  • 1 tsp mustard powder

  • salt and freshly ground black pepper

  • 75g/3oz Cheddar cheese, grated

  • 75g/3oz Caerphilly cheese, grated

For the topping
  • 100g/3½oz white breadcrumbs

  • 25g/3oz Cheddar cheese, grated

  • 25g/3oz Caerphilly cheese, grated

  • pinch freshly ground nutmeg

  • salt and freshly ground black pepper

To serve
  • drizzle olive oil

  • 8 smoked bacon chops

  • small handful fresh flatleaf parsley, chopped
