Pasta with Pumpkin and Sausage

Ingredients

  • 1 T. olive oil, plus 1 T.
  • 1 lb. bulk pork sweet Italian sausage
  • 4 cloves garlic, cracked and chopped
  • 1 med. onion, finely chopped
  • 1 bay leaf
  • 1 to 6 sprigs sage leaves, cut into chiffonade, about 2 T.
  • 1 c. dry white wine
  • 1 c. chicken stock
  • 1 c. canned pumpkin (I use the whole can)
  • 1/2 c. heavy cream
  • 1/8 t. cinnamon
  • 1/2 t. fresh ground nutmeg
  • Coarse salt
  • Black pepper
  • 1 lb. penne, cooked al dente
