Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, cut into bits
  • 1/2 cup finely chopped shallots (about 2 large)
  • 4 slices firm white sandwich bread, cut into 1/4-inch pieces
  • 1/4 cup pine nuts (1 1/4 oz)
  • 1/4 teaspoon black pepper
  • 2 oz finely grated Parmigiano-Reggiano (1 cup)
  • 1/2 teaspoon salt
  • 1/2 cup mascarpone cheese
