  • 4 boneless, skinless chicken breast halves (5 ounces each)
  • 2 red grapefruit
  • 1/2 pound napa cabbage (about 1/2 small head), cut into 4 wedges, core intact
  • 6 scallions, cut on the diagonal into 2-inch pieces
  • Vegetable-oil cooking spray
  • FOR THE COATING
  • 1/3 cup sesame seeds
  • 1 teaspoon coarse salt
  • Freshly ground pepper
  • FOR THE SAUCE
  • 2 teaspoons olive oil
  • 2 tablespoons finely chopped shallot
  • 1 1/2 cups freshly squeezed red grapefruit juice (from about 3 red grapefruits)
  • 1/4 cup dry white wine
  • 1 teaspoon minced peeled fresh ginger
  • FOR THE GARNISH
  • 1/4 teaspoon toasted sesame oil
