Ron's Brandy Apple Pie

Ingredients

Makes one 12-inch pie

  • FOR THE CRUST
  • 2 cups all-purpose flour, plus more for coating and pie plate
  • 1/2 cup whole-wheat flour, preferably stone ground
  • 1/4 cup sugar, plus more for sprinkling
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Pinch of mace
  • 1 3/4 cups (3 1/2 sticks) unsalted butter, plus more for pie plate
  • 1/4 cup brandy, chilled
  • 1 tablespoon pure vanilla extract
  • 1 large egg
  • Red food coloring
  • FOR THE FILLING
  • 3/4 cup sugar
  • 1/2 cup firmly packed dark-brown sugar
  • 1/4 cup unbleached all-purpose flour
  • 1 1/2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice
  • Pinch of mace
  • 10 Granny Smith apples, peeled, cored, and thinly sliced
  • 1/4 cup brandy
  • 1 tablespoon vanilla extract
  • 1 tablespoon unsalted butter, cut into small pieces, plus more for pie plate
  • 1 large egg yolk, beaten
