Buttermilk-cornmeal Fried Chicken

Ingredients

  • 2 cups buttermilk
  • 1 tsp. Tabasco or other hot-pepper sauce
  • 1 chicken, about 3 1/2 lb., cut into 8 serving
    pieces
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tsp. salt
  • 1 tsp. freshly ground pepper
  • 1 tsp. chopped fresh sage
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 2 cups solid vegetable shortening
