Ingredients

  • 1 tbsp black peppercorns
  • 4 black cardamom pods
  • 6 green cardamom pods
  • 4 pieces cinnamon sticks, broken into pieces
  • 4 cloves
  • 650 g bone-in lamb, (see Cooks tips)
  • 6 large cloves garlic, halved
  • 4 bay leaves
  • 4 cm piece ginger, quartered
  • 1 1/2 tsp salt
  • 2 onions, coarsely sliced
  • 350 g basmati rice
  • 4 tbsp vegetable oil
  • 2 tsp cumin seeds
  • 2-4 green chillies, slit
  • raita, to serve
