  • 8 very thin slices pancetta
  • 12 mini chicken fillet
  • 2 heads Baby Gem lettuce, roughly torn
For the dressing

  • 2 tsp peppercorns
  • 3-4 tbsp parmesan, finely grated
  • 2 cloves garlic, finely grated
  • 1 lemon, zest and juice
  • 3-4 tbsp extra virgin olive oil
For the rustic croutons

  • 4 tbsp extra virgin olive oil
  • few sprigs thyme
  • few sprigs rosemary
  • 2 cloves garlic, peeled
  • 100 g stale ciabatta or French bread, roughly torn
