Aromatic roast pork chops with gremolata and roast jersey royals

Ingredients

  • 2 large x 400-500g pork chops
  • cloves garlic
  • extra virgin olive oil
  • 6 sprigs thyme
  • 6 sprigs rosemary
  • 3 bay leaves
  • tbsp fennel seeds
For the gremolata

  • orange, finely grated zest only
  • 1 tbsp chopped parsley
  • cloves garlic, finely chopped
For the Jersey Royals

  • 500 g small new season jersey royal potatoes
  • 3 tbsp extra virgin olive oil
  • 4 sprigs lemon thyme, (see Cooks tip)
  • coarse salt
