- 1-2 tsp sweet smoked paprika
- 1 x 400g can whole plum tomatoes
- 250 g piquillo peppers, from a jar or can, halved if large
- 1 tsp cayenne pepper
- 750 ml beef stock, or to cover
- 4 tbsp finely chopped parsley
- 2 tbsp lemon zest
- 4 tbsp very finely diced gherkins
- 6 tbsp soured cream
- pinches smoked paprika
- boiled long grain rice
