Beef Wellington with a summer salad

Ingredients

  • 1 kg Welsh black beef
  • olive oil, for frying
  • 100 g butter
  • 300 g button mushrooms
  • 4 shallots
  • 2 cloves garlic, chopped
  • 125 ml madeira
  • 50 ml cream
  • 200 g large-leaf spinach, blanched and refreshed
  • 500 g puff pastry
  • 4 egg yolks
Crepes

  • 150 g plain flour
  • 2 eggs
  • 100 ml milk
  • butter, for greasing
Summer salad

  • 1 medium courgette
  • 2 sticks celery
  • 150 g fresh peas, (shelled weight), blanched
  • handfuls basil, leaves, coarsely torn
  • olive oil, for dressing
