Ingredients

For the cheese crust

  • 50 g fresh white breadcrumbs
  • bunches tarragon
  • bunches parsley
  • 50 g butter
  • 15 g gruyre cheese
  • 15 g cheddar cheese
For the fish

  • 1x 200 g cod fillets
  • 1 tsp Dijon mustard
For the hollandaise

  • 25 ml white wine
  • 25 ml white wine vinegar
  • 5 tarragon stalks
  • 5 peppercorns
  • 5 egg yolks
  • 200 ml clarified butter
  • lemon, juice only
  • 50 ml double cream, whipped
  • 1 tsp snipped chives
  • 100 g cooked spinach leaves, to serve
