6 to 7 pound fully-cooked bone-in ham
3 cups wood chips, (use hickory or oak chips for best flavor)


1 cup ketchup
1/3 cup onion, finely chopped
1/3 cup honey
1/3 cup cider vinegar
1/4 cup mustard
2 tablespoons lemon juice
1 teaspoon dried thyme leaves, crushed
1 teaspoon garlic , minced
1/2 teaspoon crushed red pepper
